Gluten-Free Dairy-Free No Bake Cookies
Every Wednesday I get to go hang out with my sister-in-law and niece and we play, craft, watch our favorite shows and basically do anything fun we think of doing! Last week we decided to make cookies. My sister-in-law has Celiac’s disease so she cannot have Gluten. I am lactose intolerant and cannot have dairy. And we are both lazy so they had to be no-bake. ;-) I thought it would be fun to document the process and share the recipe with you all!
We took a gluten-free no bake cookie recipe and made it dairy-free!

Gather all your ingredients!
Ingredients:
2 cups sugar
3 tablespoons cocoa powder
dash of salt
1/2 cup dairy free butter (we used Earth Balance)
1/2 cup coconut milk
1/2 cup peanut butter
1 teaspoon vanilla extract
3 cups gluten free oats
Step 1: Gather all your ingredients. Don’t forget to make fun drawings with your oats.

Step 2: Combine first 5 ingredients on your list!

Two cups of sugar.

Three tablespoons cocoa powder.

Don’t forget to entertain the baby!

A dash of salt.

Half a cup dairy free butter.
Step 3: Bring to a boil and continue to cook over a gentle boil for 90 seconds.

Hold baby while stirring!

Stir ingredients to melt.

Bring to a gentle boil for 90 seconds.
Step 4: Remove from heat. Add the peanut butter and stir it in!

Add 1/2 cup peanut butter and stir.
Step 5: Add oats and vanilla and stir thoroughly.

Add 3 cups of gluten free oats and stir well.

Step 6: Have your baby do a taste test (make sure its not too hot!)

Step 7: Get your cookie sheets out and put rounded tablespoons (or whatever size you want!) onto the cookie sheet!

Drop tablespoons of batter onto a cookie sheet.

Step 8: Put your cookies in the fridge to set and try to wait 30 minutes.

Step 9: Don’t forget to get the thankful smooches from your baby!

This is a great post – thank you for giving us a glimpse into your life! I actually heard it said once that all humans are gluten intolerant to a degree, and have to agree with it. I went a month without gluten (it was the whole 30/paleo plan) and honestly I’d never felt better in my life! I was less bloated, more mentally clear, etc. – so I think everyone could benefit from learning gluten free recipes!
BTW, HOW does your sister braid her own hair like that?! D:
